Ingredients
  

Main Blondie Batter

  • 1 cup fresh strawberries diced and patted dry
  • 1/2 cup unsalted butter melted
  • 3/4 cup granulated sugar
  • 1 large egg room temperature
  • 1/2 tsp kosher salt
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper.
  • Wash and dice strawberries. Pat dry with paper towels to remove excess moisture. Set aside.
  • In a mixing bowl, whisk melted butter, sugar, and salt until smooth.
  • Whisk in the egg and vanilla extract until glossy and well combined.
  • Add flour and stir gently until just combined. Do not overmix.
  • Fold in the diced strawberries with a spatula. Batter will be thick.
  • Spread evenly in the prepared pan. Bake for 25–28 minutes, or until the edges are golden and a toothpick comes out with a few moist crumbs.
  • Cool completely in the pan before slicing into bars.

Notes

These are even better the next day as the strawberry flavor deepens. Try drizzling with melted white chocolate or serving with a scoop of ice cream.
