Preparation

  • Begin by crushing 8 Oreo cookies into fine crumbs. Use a food processor or place them in a resealable bag and smash them with a rolling pin. Set aside.
  • In a mixing bowl, add 2 cups of softened cream cheese. Beat with an electric mixer until smooth and fluffy, about 2-3 minutes.
  • Gradually mix in 1/2 cup of powdered sugar and beat on low speed until fully incorporated.
  • Add 1 teaspoon of vanilla extract to the mixture and stir gently to incorporate.
  • Fold in 1 cup of whipped cream using a spatula, ensuring the mixture remains light and fluffy.

Assembly

  • Prepare serving cups and layer the crushed Oreo cookies in the bottom of each cup.
  • Spoon the cheesecake filling over the Oreo base, filling to about three-quarters full.
  • Garnish each cup with additional Oreo cookies, either whole or broken into pieces.
  • Place the cups in the refrigerator to chill for at least two hours.

Notes

Make sure the cream cheese is at room temperature for easy mixing. Chill the cups overnight for best flavor infusion.
