Instructions
 

Preparation

  • Preheat your oven to a suitable temperature and grease a 9-inch round cake pan.
  • In a mixing bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
  • In a separate bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter-sugar mixture and stir well until fully incorporated.
  • Gradually mix the dry ingredients into the wet mixture, stirring gently until just combined.
  • Fold in the diced peaches and old-fashioned oats.
  • Pour the batter into the prepared cake pan and smooth the top.

Making the Streusel

  • In a small bowl, combine melted unsalted butter, all-purpose flour, light brown sugar, and ground cinnamon to create a crumbly streusel mix.
  • Sprinkle the streusel evenly over the top of the batter in the pan.

Baking

  • Bake the cake until golden brown and a toothpick inserted in the center comes out clean.

Notes
