Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking pan by lightly greasing it or lining it with parchment paper.
  • In a large mixing bowl, combine the yellow cake mix, peach gelatin powder, and all-purpose flour. Stir the dry ingredients together gently.
  • In a separate bowl, whisk together the oil, water, and eggs. Ensure everything is combined well.
  • Gradually add the wet ingredients to the dry mixture. Blend them together on medium speed until smooth; there should be no lumps.
  • Fold in the chopped peaches using a rubber spatula to distribute the fruit evenly.
  • Pour the batter into the prepared baking pan and smooth the top gently with the spatula.

Baking

  • Place the pan in the preheated oven and bake for about 30-35 minutes or until a toothpick inserted into the center comes out clean.

Frosting

  • While the cake cools, prepare the brown sugar frosting. Beat the softened salted butter in a mixing bowl until creamy.
  • Gradually add the light brown sugar to the butter, mixing until fully combined.
  • Slowly pour in the heavy cream and vanilla extract, continuing to mix until the frosting is light and fluffy.
  • Once the cake has cooled completely, spread the brown sugar frosting evenly over the top.

Notes
