  • 4-6 pieces fresh peaches, peeled and sliced Or one (16 ounce) package of frozen peaches, not thawed.
  • 2 packages 3 ounce packages of peach-flavored gelatin Enhances peach flavor.
  • 4 large eggs Binds the cake.
  • 1 cup vegetable oil Adds moisture and richness.
  • 1 teaspoon vanilla extract Adds depth of flavor.

Frosting Ingredients

  • 2 cups brown sugar Provides sweetness and a hint of caramel.
  • 2/3 cup heavy cream Creates a creamy consistency.
  • 1/2 cup unsalted butter, at room temperature Enhances frosting texture.
  • 1 teaspoon vanilla extract For additional flavor.
  • 1/4 teaspoon salt Optional, enhances sweetness.

Instructions
 

Preparation

  • Preheat your oven according to the package directions for the yellow cake mix. Prepare a baking pan by greasing it lightly.

Mixing the Batter

  • In a large mixing bowl, combine the yellow cake mix and the peach-flavored gelatin.
  • Add the large eggs, vegetable oil, and vanilla extract to the dry mixture. Beat until smooth and well combined.
  • Gently fold in the fresh or frozen peach slices.

Baking

  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake until golden brown and a toothpick inserted in the center comes out clean.
  • Remove from the oven and cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Making the Frosting

  • In a bowl, beat the room temperature unsalted butter until creamy.
  • Gradually add the brown sugar, beating until light in color and fluffy.
  • Pour in the heavy cream and additional vanilla extract, then beat until smooth.

Frosting the Cake

  • Spread the frosting evenly across the top of the cooled cake.
  • Optionally, sprinkle a touch of salt on top of the frosting.

Notes

Use fresh peaches in season for the best flavor but frozen peaches also work well. Store the cake in an airtight container to keep it moist.
