For the Batter

  • ½ cup unsalted butter for richness and moisture

  • 1 cup whole milk moisture for batter

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the sliced peaches with 1 cup of granulated sugar, water, and lemon juice. Stir gently and let sit for about 10 minutes.
  • While the peaches are resting, place the butter in a baking dish and put it in the oven to melt.
  • In another bowl, mix together the flour, 1 cup of sugar, baking powder, and salt.
  • Gradually stir in the milk and vanilla extract into the dry mixture until just combined.

Baking

  • Pour the batter over the melted butter in the baking dish without stirring.
  • Spoon the peach mixture over the batter without stirring.
  • Sprinkle with cinnamon and nutmeg to taste.
  • Bake for 30-35 minutes, or until the top is golden brown and the peaches are bubbly.

Notes

Serve warm, ideally with a scoop of vanilla ice cream. Store leftovers in the refrigerator for 3-4 days.
