Preparation

  • Preheat your oven to 375° and lightly spray a 9 x 13 baking dish with non-stick cooking spray.
  • In a large mixing bowl, combine the sliced peaches, brown sugar, regular sugar, cinnamon, cornstarch, lemon juice, and nutmeg. Stir until the peaches are evenly coated.
  • Pour the peach mixture into the prepared baking dish, spreading it out evenly.

Creating the Topping

  • In another bowl, whisk together the all-purpose flour, regular sugar, brown sugar, baking powder, and salt.
  • Use a pastry blender to incorporate the small pieces of butter into the flour mixture until it resembles a coarse crumble.
  • Stir in the boiling water until the mixture is just combined.

Assembling and Baking

  • Combine the brown sugar, flour, and chopped pecans in a small bowl.
  • Carefully sprinkle the pecan mixture over the spooned topping.
  • Bake for 55-65 minutes, checking for a golden brown color on the topping and bubbling juices around the edges.
  • Serve warm and enjoy your cobbler with a scoop of vanilla ice cream or a dollop of whipped topping.

Notes

Use ripe peaches for the best sweetness and flavor. Let the cobbler cool slightly before serving to allow the juices to thicken. Cover loosely with aluminum foil if the topping browns too quickly.
