Ingredients
  

Crust ingredients

  • 1.5 cups graham cracker crumbs for a crumbly base
  • 0.25 cups granulated sugar adds sweetness
  • 6 tablespoons unsalted butter, melted moisture and richness

Filling ingredients

  • 1 package cream cheese, softened (8 oz) for creamy filling
  • 0.5 cups granulated sugar balances flavor
  • 1 teaspoon vanilla extract adds depth of flavor
  • 1 cup heavy whipping cream for a rich texture

Topping ingredients

  • 3-4 cups sliced fresh peaches or drained canned peaches main fruit component
  • 2 tablespoons peach preserves or apricot jam optional, for glaze; adds shine and sweetness

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a mixing bowl, combine the graham cracker crumbs and ¼ cup of granulated sugar.
  • Pour in the melted unsalted butter and mix until the crumb mixture is moistened.
  • Transfer the crumb mixture into a 9x13-inch baking dish and press it firmly into the bottom.
  • Bake the crust for about 10-12 minutes, until lightly golden.

Filling

  • In a clean bowl, blend the softened cream cheese, ½ cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully combined.

Assembly

  • Spread the cream cheese filling evenly over the cooled crust.
  • Layer the sliced peaches over the cream cheese filling.
  • Drizzle peach preserves or apricot jam over the peaches, if desired.

Baking

  • Bake the assembled bars for about 25-30 minutes, until the filling is set and the top is lightly browned.
  • Allow the peach cobbler bars to cool completely in the baking dish.
  • Cut the cooled bars into squares and serve.

Notes

Allowing the crust to cool slightly before adding the filling prevents the filling from warming and becoming runny. Use ripe peaches for the best flavor.
