Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a medium mixing bowl, combine the graham cracker crumbs and sugar. Pour in the melted unsalted butter, and mix until the mixture resembles wet sand.
  • Press the crumb mixture evenly into the bottom of a greased 9×13-inch baking pan.
  • Bake the crust for 8 to 10 minutes, or until it sets slightly and turns a light golden brown. Let it cool slightly.

Cheesecake Layer

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add in the granulated sugar, eggs, and vanilla extract, mixing until combined.
  • Carefully pour the cheesecake mixture over the pre-baked crust, spreading it to cover evenly.

Peach Layer

  • In a separate bowl, combine the chopped peaches, brown sugar, ground cinnamon, cornstarch, and lemon juice. Mix well until the peaches are evenly coated.
  • Spoon the peach mixture over the cheesecake layer, distributing it as evenly as possible.

Baking

  • Return the pan to the oven and bake for an additional 35 to 45 minutes, or until the cheesecake is set and the peach topping is bubbling slightly.
  • Remove the pan from the oven and let the bars cool completely in the pan on a wire rack.
  • Once cooled, chill the bars in the refrigerator for at least 2 hours before slicing.

Notes

For best results, use softened cream cheese, cool completely before refrigerating, and consider using fresh peaches when in season.
