  • Press the crumb mixture firmly into the bottom of a greased 9x13-inch baking dish, ensuring it is packed down evenly.

Cheesecake Filling Preparation

  • Preheat your oven to 350°F (175°C). In a bowl, beat softened cream cheese until smooth.
  • Add ½ cup granulated sugar and 1 tsp vanilla extract to the cream cheese, blending until creamy.
  • Incorporate the eggs one at a time, mixing well after each addition.
  • Fold in the diced peaches gently to maintain the creamy texture of the filling.
  • Pour the cheesecake and peach mixture over the crust and level with a spatula.

Crumb Topping Preparation and Baking

  • In a bowl, combine ¼ cup brown sugar, 1 tsp cinnamon, 1 tbsp cornstarch, and ½ cup flour with ¼ cup cold cubed butter. Mix until coarse crumbs form.
