Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs for a crunchy crust
  • 0.25 cups granulated sugar to sweeten the crust
  • 0.5 cups unsalted butter, melted adds richness and binds the crust

For the cheesecake filling

  • 16 oz cream cheese, softened creates a creamy filling
  • 0.5 cups granulated sugar sweetens the cheesecake layer

For the peach layer

  • 2.5 cups diced fresh or canned peaches (drained if canned) for a fruity layer
  • 0.25 cups brown sugar adds depth of flavor to the peaches

  • 1 tbsp cornstarch helps thicken the peach mixture

For the crumble topping

  • 0.5 cups all-purpose flour for the crumble topping
  • 0.25 cups brown sugar for sweetness in the crumble
  • 0.25 cups unsalted butter, cold and cubed creates a crumbly texture
  • 0.25 tsp cinnamon enhances the crumble flavor

Preparation

  • Preheat your oven to 325°F. Line a 9×9-inch baking dish with parchment paper.
  • Combine the graham cracker crumbs with granulated sugar and melted butter. Press the mixture into the bottom of the prepared dish.
  • Bake for 10 minutes until set and lightly golden. Let cool.

Cheesecake Layer

  • Beat the softened cream cheese until smooth. Gradually add granulated sugar and vanilla, mixing until combined.
  • Incorporate the eggs one at a time until smooth, then pour over the cooled crust.

Peach Layer

  • Toss diced peaches with brown sugar, cinnamon, and cornstarch. Spoon the mixture over the cheesecake layer.

Crumble Topping

  • Mix together flour, brown sugar, and cinnamon in a separate bowl. Cut in cold butter until the mixture resembles coarse crumbs.
  • Sprinkle the crumble topping evenly over the peach layer.

Baking

  • Bake for 45 to 50 minutes until set and lightly golden. Let cool completely, then chill in the refrigerator for at least 3 hours before serving.
  • Gently lift the bars out of the baking dish and slice into squares.

Notes

Serve with whipped cream or ice cream. Store leftovers in an airtight container for up to a week.
