Filling

  • 8 cups peeled and thinly sliced fresh peaches Use ripe peaches for best flavor.
  • ½ cup granulated sugar Provides sweetness to the peaches.
  • ½ cup all-purpose flour Thickening agent.
  • 1 tablespoon cornstarch Helps thicken the filling.
  • 2 teaspoons ground cinnamon Adds warm spice.
  • ¼ teaspoon salt Enhances flavor.

Topping

  • ¾ cup packed light brown sugar Provides rich sweetness.
  • ½ cup salted butter, room temperature Binding agent for the topping.
  • 1 ¾ cups old-fashioned oats Provides crunchy texture.
  • ½ cup all-purpose flour Used in the topping mixture.
  • 1 teaspoon ground cinnamon For additional flavor in the topping.

Instructions
 

Preparation

  • Preheat your oven to 400°F.
  • Butter a 9x9 baking pan and set it aside.
  • In a large mixing bowl, combine the sliced peaches, granulated sugar, 2 tablespoons of flour, cornstarch, 1 teaspoon of cinnamon, and salt. Mix well.
  • Pour the peach mixture into the prepared pan and set aside.
  • In the same bowl, cream together the brown sugar, remaining ½ cup of flour, room temperature butter, and remaining teaspoon of cinnamon until wet and clumpy.
  • Add oats to the mixture and stir until coarse.
  • Crumble the oat mixture evenly over the peaches.

Baking

  • Bake in the preheated oven for 20 to 25 minutes or until the topping is light golden.
  • Remove from the oven and let it rest for 10 minutes.
  • Serve warm, optionally with vanilla ice cream.

Notes

For best results, use ripe peaches and let the crisp rest after baking. Consider adding nuts for extra crunch and spices to suit your taste.
