Ingredients
  

For the Crust

  • 2 ½ cups all-purpose flour for structure

For the Filling

  • 1 cup granulated sugar for sweetness in the filling

  • ¼ teaspoon salt balances sweetness
  • 5 cups pitted, peeled, and chopped peaches (about 7-8 peaches) main ingredient, sweetness, and moisture
  • 6 tablespoons heavy cream contributes richness
  • ½ teaspoon vanilla extract optional, adds warmth

For the Topping

  • ¼ cup brown sugar, preferably dark adds depth of flavor

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease a 9x13-inch baking pan or line it with parchment paper.
  • In a food processor, combine the 2 ½ cups of flour, ⅔ cup of sugar, and ½ teaspoon of salt. Pulse to mix.
  • Add 1 ¼ cups of cold butter and pulse until the mixture resembles coarse crumbs.
  • Reserve 1½ cups of the crumb mixture for topping. Press the remaining mixture into the bottom of the pan and bake for approximately 15 minutes.
  • Mix the reserved crumbs with ¼ cup of brown sugar until large clumps form for the topping.
  • In a bowl, mix the 1 cup of sugar, ¼ cup of flour, ½ teaspoon of cinnamon, and ¼ teaspoon of salt for the filling.
  • Stir in the chopped peaches to coat with the dry mix.
  • Combine the heavy cream and vanilla extract (if using) in a separate bowl, then pour over the peach mixture and stir gently.
  • Pour the peach filling over the crust, then sprinkle the crumb topping on top.
  • Bake for about 45 minutes until bubbly and golden brown.
  • Allow the bars to cool completely before refrigerating for at least 2 hours before cutting.

Notes

Ensure your butter is cold for a flaky texture. Don’t skip the cooling time after baking for clean cuts.
