Instructions
 

Preparation

  • Preheat your oven to 375°F and prepare 2 or 3 baking sheets by lining them with silicone mats or baking parchment.
  • In a medium mixing bowl, combine the melted butter, peanut butter, granulated sugar, honey, and salt. Whisk until smooth and well-blended.
  • Gradually fold in the all-purpose flour until a soft dough forms. Push the mixture together gently until it holds without being sticky.
  • Lightly sprinkle your work surface with light brown sugar. Roll out the dough to about ⅓ inch thickness and cut into desired shapes.
  • Place cut cookies on prepared baking sheets, spacing them 2 inches apart. Sprinkle tops with additional light brown sugar.

Baking

  • Bake cookies in batches for 8-9 minutes, watching for a just-golden edge.
  • Allow cookies to cool briefly on the baking sheet before transferring to a wire rack to cool completely.

Decorating

  • Optionally, decorate cooled cookies with melted chocolate and sprinkles or chopped peanuts.
  • Place decorated cookies back on parchment to dry before storing in an airtight container.

Notes

Ensure melted butter is not too hot when mixing. Use a light touch when rolling dough to avoid tough cookies. Let cookies cool completely to prevent chocolate melting while decorating.
