Ingredients

Wet Ingredients

  • 1/2 cup unsalted butter, melted adds moisture and richness
  • 1 cup light or dark brown sugar provides sweetness and a chewy texture
  • 1/2 cup creamy peanut butter adds richness and creamy texture
  • 1 large egg, room temperature binds ingredients and adds moisture
  • 1 teaspoon pure vanilla extract enhances overall flavor

Dry Ingredients

  • 1 and 1/2 cups all-purpose flour, spooned & leveled provides structure
  • 1/4 teaspoon salt balances sweetness
  • 1/2 cup semi-sweet chocolate chips, plus more to sprinkle on top adds sweetness and chocolate flavor

Instructions

Preparation

  • Preheat your oven to 350°F (177°C). Line the baking pan with aluminum foil, leaving overhang on the edges to help lift the blondies out later.
  • In a large mixing bowl, whisk together the melted butter and brown sugar until smooth and glossy.
  • Mix in the creamy peanut butter, egg, and vanilla, whisking until fully combined.
  • Add the flour and salt gently with a spatula until just combined without overmixing.
  • Stir in the chocolate chips until evenly distributed.
  • Scoop the batter into the prepared pan, smoothing the top and optionally adding more chocolate chips on top.
  • Bake for 30-35 minutes, until the surface is set and a toothpick comes out with a few moist crumbs.
  • Cool in the pan for at least 1 hour before lifting out and cutting.

Notes

Make sure to use room temperature ingredients for best results. Store the blondies in an airtight container to maintain freshness, and they can be frozen for longer storage.
