Preparation

  • Combine the cottage cheese and peanut butter in a blender or food processor. Blend until smooth and creamy, scraping down the sides as needed.
  • Add the sweetener, vanilla extract, and optional salt. Blend until fully integrated and adjust sweetness to taste.
  • If the mousse is too thick, add the milk or heavy cream, one tablespoon at a time, blending until the desired consistency is reached.
  • Transfer the mousse to serving dishes.
  • For optional toppings, melt the dark chocolate chips with coconut oil in the microwave or over a double boiler. Drizzle over the mousse once slightly cooled.
  • Garnish the mousse with chopped peanuts for crunch.

Notes

Chill the mousse before serving for a firmer texture. Keep toppings separate until serving to maintain their crunch.
