  • 3/4 cup creamy peanut butter adds moisture and richness

Cookie Dough

  • 1 stick unsalted butter for richness
  • 1 cup light brown sugar adds moisture and depth
  • 1 large egg, at room temperature structure and moisture
  • 1 large egg yolk, at room temperature richness
  • 1 teaspoon vanilla extract for flavor
  • 1 2/3 cups all-purpose flour structure
  • 2/3 cup natural unsweetened cocoa powder rich chocolate flavor
  • 1 teaspoon baking soda leavening agent
  • 1/2 teaspoon fine sea salt enhances flavor
  • 1 cup semisweet chocolate chips plus more for garnish, sweetness and texture
  • Flaky sea salt, for finishing optional, adds texture

Instructions
 

Preparation

  • In a medium bowl, combine the creamy peanut butter, powdered sugar, and 1/2 teaspoon of vanilla extract. Mix until smooth.
  • In a large bowl, beat together the unsalted butter and light brown sugar until creamy.
  • Add the large egg and egg yolk to the mixture, and mix until fully incorporated.
  • Stir in the remaining teaspoon of vanilla extract.
  • In a different bowl, whisk together the flour, cocoa powder, baking soda, and sea salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the semisweet chocolate chips gently.

Baking

  • Preheat the oven and line a baking sheet with parchment paper.
  • Take a scoop of dough, flatten it slightly, add a spoonful of peanut butter filling in the center, and fold the dough over to seal it.
  • Space the cookie dough balls on the baking sheet and add extra chocolate chips on top if desired.
  • Bake until edges are set but centers are still soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, ensure butter is softened and do not overmix the dough after adding flour.
