  • 3 tablespoons bourbon adds depth of flavor

  • 1 teaspoon ground cinnamon warm spice

Topping

  • 1 cup all-purpose flour or gluten-free flour blend for structure
  • 1 1/2 teaspoons baking powder leavening agent
  • 1/4 teaspoon salt enhances flavor
  • 1/2 cup unsalted butter, cold and cubed richness and moisture
  • 1/2 cup whole milk or almond/oat milk for dairy-free moisture
  • 1 teaspoon vanilla extract aromatic flavor

For Serving

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the sliced peaches with 1/2 cup of granulated sugar, 1/4 cup of brown sugar, bourbon, and ground cinnamon. Toss gently and let sit for 10-15 minutes.
  • In another bowl, whisk together the flour, baking powder, salt, and remaining 1/4 cup of granulated sugar.
  • Incorporate the cold, cubed butter into the flour mixture until it resembles coarse crumbs.
  • Stir in the milk and vanilla extract until just combined.

Baking

  • Pour the peach mixture into a greased 9×13-inch baking dish.
  • Dollop the topping over the peaches in large spoonfuls.
  • Bake for 35-40 minutes, until golden brown.
  • Allow to rest for 10-15 minutes before serving.
  • Serve warm with vanilla bean ice cream on top.

Notes

Use ripe peaches for maximum flavor. Don’t skip the resting period after baking for better texture.
