Preparation

  • Combine the graham cracker crumbs with the melted butter and granulated sugar (or sweetener) in a mixing bowl. Stir until the crumbs are thoroughly coated and have a slightly sandy texture.
  • In a larger mixing bowl, beat together the softened cream cheese, thickened cream, and granulated sugar (or sweetener) using an electric mixer set to medium-high speed until smooth and creamy, about 2 to 3 minutes.
  • Carefully fold in the Greek yogurt, diced pineapple, and vanilla extract using a spatula, mixing until just combined.

Assembly

  • Divide the graham cracker crumb mixture evenly among 4 serving glasses, pressing down firmly to create a solid layer.
  • Layer the cream cheese mixture on top of the crumb base in each glass, smoothing the tops with a spatula.
  • Cover the glasses and place them in the refrigerator to chill for about 15 to 30 minutes.
  • Garnish each cheesecake cup with an additional pineapple slice and a Maraschino cherry before serving.

Notes

Use fresh pineapple for a brighter flavor, and consider toasting a few extra graham cracker crumbs to sprinkle on top just before serving.
