Instructions
 

Preparation

  • Preheat your oven to 350°F and prepare a 9×13 baking pan by lining it with parchment paper or foil.
  • In a medium bowl, combine the graham cracker crumbs, 6 tablespoons of granulated sugar, and melted butter. Mix until crumbly.
  • Press the crumb mixture firmly into the bottom of the prepared baking pan.

Pumpkin Filling

  • In another bowl, whisk together the pumpkin puree, heavy cream, 2 eggs, ¾ cup of granulated sugar, vanilla extract, and pumpkin pie spice until well combined.
  • Pour the pumpkin mixture over the graham cracker crust, spreading it evenly.

Cheesecake Layer

  • In a separate bowl, beat together the softened cream cheese, 1 egg, egg yolk, ½ cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth.
  • Spoon tablespoonfuls of the cheesecake filling over the pumpkin layer and gently swirl with a knife or toothpick.

Baking

  • Bake in the preheated oven for 37 to 42 minutes, until the center is set.
  • Once baked, cool the bars in the pan for 30 minutes, then refrigerate for 2 hours.
  • Slice into squares and serve.

Notes

Ensure cream cheese is softened, press crust firmly, chill bars for better texture, and slice with a sharp knife for clean edges. Refrigerate overnight if possible for enhanced flavor.
