Instructions
 

Preparation

  • Preheat your oven to 350 degrees and prepare a 9 x 5 loaf pan by greasing it generously with cooking spray.
  • In a large bowl, mix together the pumpkin puree, egg, brown sugar, oil, sour cream, and vanilla extract until well combined and smooth.
  • Gently fold in the pumpkin pie spice, flour, baking powder, baking soda, and salt until just combined.
  • Pour about two-thirds of the batter into the prepared loaf pan, spreading it evenly.

Cream Cheese Filling

  • In a medium bowl, whisk the softened cream cheese, egg, granulated sugar, and three tablespoons of flour until smooth and creamy.
  • Pour the cream cheese filling over the batter in the loaf pan and spread it gently and evenly.
  • Pour the remaining batter on top of the cream cheese filling, spreading it out gently.

Baking

  • Place the loaf pan in the preheated oven and bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out mostly clean.
  • Allow the bread to cool in the pan for about 15 minutes before carefully removing it and placing it on a wire rack to cool completely.

Notes

To enhance flavor, consider adding cinnamon or nutmeg to the cream cheese mixture. Ensure the cream cheese is softened for smooth mixing.
