Cream Cheese Filling

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F. Grease the muffin tin with non-stick cooking spray.
  • In a large bowl, combine the pumpkin puree, eggs, light brown sugar, oil, sour cream, and vanilla extract. Mix until smooth and cohesive.
  • In a separate bowl, mix together the flour, pumpkin pie spice, baking powder, baking soda, and salt. Stir to ensure any lumps are broken up.
  • Gently fold the dry ingredients into the wet mixture until just combined.

Baking

  • Scoop the muffin batter into the prepared muffin tin, filling each cup about three-quarters full.
  • For the cream cheese filling, mix cream cheese, egg, granulated sugar, and vanilla until smooth.
  • Pipe about 1 tablespoon of cream cheese filling into the center of each muffin.
  • Bake in the preheated oven for 15-20 minutes, or until a toothpick comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring to a cooling rack.

Notes

For best results, use softened cream cheese and avoid overmixing the batter. Store in an airtight container to maintain freshness.
