Ingredients
  

For the crust

  • 1 teaspoon unsalted butter adds richness
  • 14 grams gingersnaps (2 small cookies), crushed into crumbs provides a crunchy base

For the filling

  • 1/3 cup pumpkin purée offers moisture and flavor
  • 1 large egg binds ingredients together
  • 1 tablespoon milk or cream adds creaminess
  • 2 tablespoons packed brown sugar adds sweetness and moisture
  • 1 teaspoon pumpkin pie spice infuses warm flavors

Preparation

  • Start by placing the butter into your microwave-safe mug. Microwave on LOW until it melts completely.
  • Stir in the crushed gingersnaps into the melted butter until well combined. Press the mixture firmly into the bottom of the mug.
  • In a separate small bowl, whisk together the pumpkin purée, egg, milk or cream, brown sugar, and pumpkin pie spice until smooth.

Cooking

  • Pour the pumpkin mixture over the gingersnap crust in the mug carefully.
  • Set the mug on a microwave-safe plate and microwave on full power for 2 minutes. Check for doneness using a knife.
  • If necessary, cook in additional 30-second increments until set. Allow cooling for a couple of minutes before enjoying.

Notes

Use a larger mug to prevent spills during cooking. Add toppings like whipped cream and crushed nuts if desired.
