Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with aluminum foil and spray it with cooking spray.
  • In a large bowl, crack the eggs and add the sugar, pumpkin puree, canola oil, pumpkin pie spice, and vanilla extract. Whisk until well combined.
  • Gradually add in the flour, baking powder, baking soda, and salt. Stir gently until just combined, being careful not to overmix.
  • Pour the batter into the prepared pan, smoothing the top with a spatula.

Baking

  • Bake the cake for about 35 to 40 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.
  • Once baked, let the cake cool completely on a cooling rack.

Frosting

  • In a mixing bowl, beat the softened cream cheese and butter until creamy. Gradually add the confectioners’ sugar, vanilla extract, and salt. Beat until smooth and well combined.
  • Once the cake is completely cooled, spread the cream cheese frosting on top.

Notes

For best results, let the cake cool completely before frosting. Store leftovers in an airtight container.
