Preparation

  • Preheat your oven.
  • Mix the graham cracker crumbs and melted coconut oil in a medium bowl until the crumbs are fully coated and resemble wet sand.
  • Press the crumb mixture into the bottom of your baking dish, ensuring it's evenly spread and compacted.

Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add Greek yogurt, honey or maple syrup, vanilla extract, and eggs into the bowl with the cream cheese. Mix until well combined.
  • Gently fold in the fresh raspberries into the cream cheese mixture.

Baking

  • Pour the creamy raspberry mixture over the prepared crust, spreading it evenly.
  • Place the baking dish in the oven and bake until the cheesecake is set and lightly golden on the edges.
  • Once out of the oven, allow the cheesecake bars to cool completely at room temperature before refrigerating.
  • After cooling, refrigerate for several hours or overnight for best results.
