Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  • In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In another bowl, beat together sugar and oil until smooth, then add eggs one at a time, mixing until combined.
  • Stir in vanilla extract and buttermilk until the mixture is smooth and creamy.
  • Gradually mix in red food coloring until desired shade is achieved.
  • Combine the dry and wet ingredients in batches, stirring just until combined. Avoid overmixing.
  • Add vinegar and stir briefly. The batter will slightly bubble — this helps with texture.
  • Divide the batter evenly into pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cakes cool completely before frosting. Layer with cream cheese frosting and decorate as desired.

Notes

Store leftover cake in the refrigerator for up to 4 days, or freeze slices for up to 2 months. For a lighter twist, use beet juice as natural coloring or transform the recipe into cupcakes or cake pops.
For a classic presentation, frost with swirls and garnish with fresh berries or edible flowers.
