  • 2.5 cups all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups granulated sugar
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 2 tbsp red food coloring

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 0.5 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  • In a large bowl, whisk together flour, cocoa, baking soda, and salt.
  • In another bowl, mix sugar, oil, eggs, and vanilla until smooth. Add buttermilk, vinegar, and food coloring. Stir until combined.
  • Gently fold the dry ingredients into the wet ingredients until just mixed. Do not overmix.
  • Divide batter between pans. Bake for 25–30 minutes or until a toothpick comes out clean.
  • Cool cakes completely. In a bowl, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
  • Frost the cooled cakes with cream cheese frosting. Decorate with cake crumbs, chocolate curls, or edible flowers if desired.

Notes

For a natural option, use beet puree for coloring. Chill cake before slicing for cleaner layers. Great as cupcakes or layered trifles too!
