Mascarpone Frosting Ingredients

  • 113 g heavy cream (cold, for richness)
  • 50 g granulated sugar (for sweetness in frosting)
  • 113 g mascarpone (cold, creamy texture)
  • 1/2 tsp vanilla paste (flavor in frosting)

Instructions
 

Preparation

  • Preheat your oven to 300°F.
  • Line baking sheets with parchment paper.
  • Sift together powdered sugar, almond flour, and cocoa powder in a mixing bowl.
  • Whisk egg whites in another mixing bowl until foamy; gradually add granulated sugar, beating until stiff peaks form.
  • Gently fold the dry ingredients into the whipped egg whites until smooth.
  • Add vanilla paste and red food gel, folding gently until well incorporated.
  • Transfer batter to a piping bag and pipe small, even circles onto baking sheets.
  • Tap baking sheets on the counter to release air bubbles; allow the piped macarons to rest for about 30 minutes.

Baking

  • Bake in the preheated oven for about 15-20 minutes.
  • Remove from oven and let cool completely on sheets.

Frosting

  • In a clean bowl, beat cold heavy cream until soft peaks form.
  • Gradually add granulated sugar, mascarpone, and vanilla paste; continue beating until smooth and stiff peaks form.

Assembly

  • Pair macarons into halves of similar sizes.
  • Pipe a dollop of mascarpone frosting onto the flat side of one half and press the other half on top.
  • Allow macarons to set in the refrigerator for a couple of hours before serving.
