Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • In a mixing bowl, combine the all-purpose flour, granulated sugar, and softened unsalted butter until it resembles coarse crumbs.
  • Press the crumbly mixture into the bottom of the greased baking dish evenly.
  • Bake the crust for 10-12 minutes until lightly golden. Let cool slightly.
  • In another mixing bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  • Spread the cream cheese mixture over the cooled crust evenly.
  • Toss the diced rhubarb with some sugar and flour, then distribute evenly over the cream cheese layer.
  • Combine the rolled oats, brown sugar, flour, and melted butter in a bowl until crumbly, then sprinkle over the rhubarb layer.

Baking

  • Bake for an additional 35-40 minutes, or until the topping is golden brown.
  • Allow the bars to cool completely before slicing.
