Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking dish by greasing it.
  • In a bowl, combine the all-purpose flour, softened butter, granulated sugar, and salt. Mix until the mixture resembles coarse crumbs.
  • Press this mixture firmly into the bottom of the prepared dish to create an even base.
  • Place the crust in the preheated oven and bake for about 15 minutes until it is light golden brown.

Filling

  • In another bowl, whisk together the eggs, granulated sugar, vanilla extract, and cornstarch until the mixture is smooth.
  • Fold in the chopped rhubarb to the egg mixture.

Combining

  • Carefully pour the rhubarb mixture over the baked crust, ensuring it spreads out evenly.
  • Return the baking dish to the oven for an additional 25 to 30 minutes.

Notes

Ensure butter is softened for a tender crust. Allow bars to cool completely before slicing.
