  • ½ cup unsalted butter (melted)
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • ½ cup sourdough starter discard (or active sourdough starter)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup dark chocolate chips or chunks

Preparation

  • Start by melting the unsalted butter in a mixing bowl until it’s liquid but not boiling. Once melted, let it cool slightly so it’s warm but not hot.
  • Add the granulated sugar and packed brown sugar to the melted butter. Stir until the mixture is well combined.
  • Crack in the two large eggs, mixing them in one at a time until the batter looks well blended and creamy.
  • Incorporate the sourdough starter and vanilla extract into the mixture, mixing until combined smoothly.
  • Sift in the all-purpose flour, cocoa powder, salt, and baking powder, then gently fold in until just combined.
  • Fold in the dark chocolate chips or chunks until evenly distributed.

Baking

  • Prepare your baking pan by greasing it or lining it with parchment paper. Pour the brownie batter into the pan and spread it evenly.
  • Bake the brownies in a preheated oven until the edges are set and the center has a slight jiggle.
