For the Frosting

  • 16 oz cream cheese (softened for frosting)
  • 1/2 cup salted butter (room temperature for easy blending)
  • 1 tsp vanilla extract (flavor enhancer)
  • 2 cups powdered sugar (for sweetness and frosting consistency)

For Drizzling

  • 9 oz jar salted caramel topping (for drizzling)
  • 4 oz salted caramel topping (optional, for drizzling)
  • 2 tbsp coarse salt (optional, for sprinkling)

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Grease and lightly flour a 9×13 inch baking pan.
  • Beat eggs and brown sugar together for 1-2 minutes on medium-high speed.
  • Gradually drizzle in vegetable oil while continuing to beat the mixture.
  • Lower the mixer speed to medium, then add pumpkin puree and salted caramel topping.
  • Mix on low to incorporate the flour, baking powder, baking soda, and pumpkin pie spice, scraping the bowl as needed.
  • Pour the batter into the prepared pan and spread it evenly.

Baking

  • Bake in the preheated oven for 34-36 minutes.
  • Let the cake cool for 10 minutes.

Topping

  • Poke holes all over the cake using a utensil.
  • Pour the remaining salted caramel topping over the cake.
  • Let the cake cool completely before frosting.
  • Prepare the cream cheese frosting by mixing softened cream cheese, salted butter, vanilla extract, and powdered sugar until smooth.
  • Frost the cooled cake evenly with the cream cheese mixture.
  • If desired, drizzle with additional salted caramel topping for an extra touch of sweetness.
  • Optionally sprinkle with coarse salt before serving.
