Ingredients
  

Cheesecake Filling

  • 8 oz fat-free cream cheese softened
  • 1 cup non-fat vanilla Greek yogurt
  • 1 tsp pure vanilla extract
  • 1 pinch salt
  • 1 cup Lite Cool Whip thawed

Crust & Topping

  • 12 Oreo Thins whole, for crust
  • 6 Oreo Thins crushed, for filling and topping

Instructions
 

  • Line a 12-cup muffin tin with paper cupcake liners.
  • Place one whole Oreo Thin at the bottom of each liner to form the crust.
  • In a mixing bowl, beat the softened cream cheese until smooth.
  • Add the Greek yogurt, vanilla extract, and salt. Mix until creamy and well combined.
  • Stir in the crushed Oreo Thins.
  • Gently fold in the Lite Cool Whip until the mixture is fluffy and smooth.
  • Divide the mixture evenly among the cupcake liners. Top with additional crushed Oreos if desired.
  • Freeze for at least 3 hours or until firm. Serve chilled.

Notes

To add a twist, drizzle with chocolate syrup, top with mini Oreos, or pair with fresh berries. Keep extras frozen for a quick treat!
