Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk room temperature

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour mini cake pans or line a muffin tin with cupcake liners.
  • In a medium bowl, whisk flour, baking powder, and salt together.
  • In a large bowl, beat butter and sugar until light and fluffy, about 3 minutes.
  • Mix in eggs one at a time, then add vanilla extract.
  • Alternate adding flour mixture and milk to the butter mixture, beginning and ending with flour. Mix until just combined.
  • Divide batter evenly into prepared pans. Bake 18–22 minutes, or until cakes spring back when lightly touched in the center.
  • Cool completely on a wire rack before frosting and decorating with sprinkles, fruit, or candles.

Notes

These mini cakes are endlessly customizable — swap in cocoa powder for chocolate versions, fold in fruit, or tint with food coloring for a rainbow party surprise.
