Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Line your baking sheets with silicone liners or parchment paper.
  • In a mixing bowl, whisk together the all-purpose flour, salt, and baking soda.
  • Using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add in the egg and vanilla extract, mixing until fully incorporated.

Mixing

  • Reduce the mixer speed to low and gradually add the flour mixture until just combined.
  • Fold in the diced peaches and peach preserves until evenly distributed.

Baking

  • Drop tablespoonfuls of dough onto prepared baking sheets, leaving 2 inches of space between each cookie.
  • In a small bowl, combine the sanding sugar and ground cinnamon. Sprinkle this mixture over the cookie dough before baking.
  • Bake for 11 to 13 minutes, or until golden brown.
  • Allow cookies to cool on the pans for about 5 minutes before transferring to wire racks to cool completely.

Notes

For best results, ensure your butter is properly softened and do not overmix the dough after adding the flour. Experiment with different fruits or nuts for variety.
