Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a microwave-safe bowl, combine the chocolate chips and unsalted butter. Microwave in 20-30 second intervals, stirring until smooth and fully melted.
  • Add the granulated sugar to the melted chocolate and butter mixture, whisk until shiny and combined.
  • Incorporate the egg and vanilla extract, whisk until thick and smooth.
  • Mix in the sourdough discard until fully incorporated.
  • Add the cocoa powder, flour, baking powder, and salt. Gently fold these dry ingredients into the chocolate mixture until a thick batter forms.
  • Fold in the chocolate chunks evenly throughout the dough.
  • Let the dough rest for about 15 minutes for best results.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space for spreading.
  • Bake the cookies for 10-12 minutes, looking for shiny, crackled tops and set edges.
  • Let the cookies cool on the baking sheet for about 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Store cookies in an airtight container at room temperature or refrigerate for up to a week. They can also be frozen for up to three months. Reheat gently in the microwave for a few seconds to restore softness.
