  • 1 cup sourdough discard (unfed, room temperature) provides flavor and moisture
  • 1.5 cups all-purpose flour (plus extra for dusting) structural base
  • 2 tablespoons sugar adds slight sweetness
  • 0.75 teaspoon baking soda helps with leavening
  • 0.5 teaspoon baking powder aids in rising
  • 0.5 teaspoon salt enhances flavor
  • 2/3 cup warm water hydrates the dough

Boiling and Topping Ingredients

  • 0.5 tablespoon baking soda (for boiling water bath) helps achieve a chewy texture
  • to taste coarse sea salt, for sprinkling adds flavor and texture
  • 2 tablespoons melted butter (optional, for brushing) adds richness
  • to taste mustard or your favorite dipping sauce (optional) complements the bites

Preparation

  • Combine the sourdough discard, all-purpose flour, sugar, baking soda, baking powder, and salt in a mixing bowl. Stir until evenly combined.
  • Gradually add warm water to the dry ingredients while mixing until a cohesive dough forms.
  • Knead the dough gently on a floured surface until smooth and elastic.

Boiling and Baking

  • Preheat a large pot of water and stir in additional baking soda to create an alkaline boiling bath.
  • Cut the kneaded dough into small pieces or shapes.
  • Place pieces into boiling water bath, cooking for about 30 seconds on each side.
  • Remove bites with a slotted spoon and transfer to a baking sheet lined with parchment paper.
  • Brush tops of cheese bites with melted butter, if desired.
  • Sprinkle coarse sea salt over bites before baking.
  • Bake in the preheated oven until golden brown and cooked through.

Notes

Store at room temperature in an airtight container for up to two days, or refrigerate for up to a week. Reheat in the oven at low temperature.
