  • ¾ cup sourdough discard (unfed) adds moisture and flavor

Cinnamon Filling Ingredients

  • cup brown sugar, packed deep sweetness
  • 1 ½ tablespoons ground cinnamon warm spice flavor
  • 3 tablespoons unsalted butter, softened for spreading

Icing Ingredients

  • ¾ cup powdered sugar for icing
  • 1 tablespoon melted butter for icing
  • ½ teaspoon vanilla extract for icing
  • 1–2 tablespoons milk or cream for consistency of icing

Instructions
 

Preparation

  • Preheat your oven to prepare it for baking.
  • In a mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until combined.
  • Add the sourdough discard, milk, melted butter, and vanilla extract to the dry mixture. Fold the wet ingredients into the dry ingredients until just combined.
  • Transfer the dough to a lightly floured surface and knead gently for about a minute until it forms a soft, cohesive ball.
  • Roll the dough out into a rectangle, roughly ¼ inch thick.
  • Spread the softened butter across the dough evenly.

Cinnamon Filling

  • Mix the brown sugar and ground cinnamon in a bowl.
  • Sprinkle the cinnamon mixture generously over the buttered dough.
  • Roll up the dough tightly starting from one edge to the other, forming a log.
  • Cut the log into evenly sized sections, about 1 to 1.5 inches thick.
  • Place the rolls on a baking sheet lined with parchment paper.

Baking

  • Bake the rolls in the preheated oven until golden brown and set to the touch.
  • Remove the rolls from the oven and allow them to cool slightly.

Icing

  • In a bowl, combine the powdered sugar, melted butter, vanilla extract, and milk or cream, stirring until smooth.
  • Drizzle the icing over the warm rolls.

Notes

For fluffier rolls, avoid over-kneading the dough. Allow rolls to cool slightly before icing to prevent melting.
