Preparation

  • Gather all the dry ingredients in a mixing bowl: all-purpose flour, baking powder, baking soda, sugar, and salt. Whisk together well.
  • In another bowl, whisk together the wet ingredients: sourdough discard, milk, egg, melted butter, and vanilla extract until fully incorporated.
  • Pour the wet mixture into the bowl with the dry ingredients and gently fold until just combined. Don’t overmix; a few lumps are acceptable.

Cooking

  • Preheat your waffle maker or griddle according to the manufacturer’s instructions and grease lightly to prevent sticking.
  • Pour about one cup of batter onto the preheated waffle maker and cook until it releases easily, generally indicated by steam release.
  • Remove the cooked waffle with a fork and place it on a cooling rack. Repeat with the remaining batter.

Notes

Make sure your sourdough discard is bubbly and active for optimal flavor. Adjust the sweetness by modifying the sugar amount.
