Preparation

  • Preheat your oven to 350°F. Grease your loaf pans with vegetable oil or butter.
  • In a medium mixing bowl, combine the peaches, vegetable oil, sugar, eggs, sour cream, and vanilla extract. Whisk until well blended.
  • Gradually add the flour, baking soda, and salt. Stir until just combined; do not overmix.
  • Pour the batter evenly into the prepared loaf pans.

Baking

  • Bake mini loaves for 25-30 minutes and a large loaf for 50-55 minutes. Test with a toothpick.
  • Remove from oven and let cool slightly in pans. Transfer to a wire rack to cool completely.

Notes

Ensure peaches are ripe for best flavor. Do not overmix the batter and let bread cool completely before slicing. For a sweet crust, sprinkle sugar on top before baking.
