  • 2 bags Frozen peaches (20 ounces each, tender and sweet) Thaw before using.

  • 2 teaspoons Corn starch Thickens the peach filling.
  • 1 teaspoon Cream of tartar Helps stabilize the batter.
  • 1/2 stick Butter, unsalted, room temperature For richness and flavor.
  • 2 tablespoons Water To combine with other ingredients.
  • 1 teaspoon Fresh lemon juice Balances sweetness.

Cobbler Crust

  • 2 cups All purpose Flour The main structure of the batter.
  • 1/2 cup Granulated sugar For the topping.
  • 1/2 cup Brown sugar For added flavor in dough.
  • 2 teaspoons Baking powder Provides leavening.
  • 1/2 tablespoon Cinnamon Reserved for garnishing.
  • 1 stick Butter, unsalted, cold Creates a flaky texture.
  • 1/4 cup Boiling hot water Helps with batter consistency.

  • 3 tablespoons Granulated sugar To dust top of cobbler.

Instructions
 

Preparation

  • Combine the frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract (if using), cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice in a mixing bowl. Mix gently until the peaches are well coated and the sugars dissolve.
  • Transfer the peach mixture into a baking dish, spreading it evenly across the bottom.
  • In another mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  • Chop the cold butter into small cubes and add them to the dry ingredients. Work the butter into the flour mixture until crumbly.
  • Slowly add the boiling water to the flour mixture while stirring until a soft dough forms.
  • Spoon dollops of the dough over the peach filling in the baking dish.
  • Dust the top of the cobbler with cinnamon and granulated sugar.
  • Bake until the topping is golden brown and the peach filling is bubbling.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in the refrigerator for up to three days, reheating gently to preserve texture.
