Ingredients
  

For the Batter

  • 2 ¼ cups all-purpose flour Structure
  • 1 Tbsp baking powder Leavening agent

For the Peach Filling

  • 2 cans of peaches, drained Juicy fruit base

For Topping

  • 4 Tbsp butter Richness for topping

For Frosting

  • 4 oz cream cheese, softened Creaminess for frosting
  • 4 Tbsp butter, softened Creaminess for frosting
  • 1 ½ cups powdered sugar, sifted Sweetness and smooth texture

  • ¼ tsp vanilla Flavor for frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a mixing bowl, combine the all-purpose flour, baking powder, salt, cinnamon, allspice, and nutmeg.
  • In another bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  • Add the eggs to the butter and sugar mixture one at a time, mixing gently after each addition.
  • Blend in the plain Greek yogurt and vanilla extract.
  • Gradually stir the dry mixture into the wet batter until smooth.
  • Fold in the cubed cream cheese gently.

Assembly and Baking

  • Prepare a baking dish by greasing it lightly.
  • Pour the peach mixture into the bottom of the dish.
  • Spoon the batter over the peach mixture.
  • Melt 4 tablespoons of butter and drizzle it over the top of the batter.
  • Sprinkle the packed brown sugar evenly over the batter.
  • Transfer to the oven and bake for 30-40 minutes until golden brown.

Frosting

  • While the cobbler bakes, beat the softened cream cheese and butter until smooth.
  • Gradually add in the powdered sugar, cinnamon, and vanilla extract until smooth.

Finishing

  • After baking, allow the cobbler to cool slightly before frosting.

Notes

Serve warm with whipped cream or vanilla ice cream. Use fresh, ripe peaches for the best flavor. Store leftovers covered to maintain moisture.
