Ingredients
  

Peach Filling

  • 6 cups fresh peaches sliced
  • 4 cups granulated sugar divided
  • 1 cup unsalted butter melted

Topping

  • 4 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon vanilla extract
  • 8 tablespoons unsalted butter cold, cut into cubes
  • 2 cups self-rising flour
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a 9×13-inch baking dish, combine 1 cup of the sugar with the melted butter and stir until evenly mixed.
  • Arrange the sliced peaches evenly over the butter and sugar mixture.
  • Sprinkle 1/2 cup of the sugar evenly over the peaches.
  • In a mixing bowl, whisk together the eggs, all-purpose flour, cinnamon, nutmeg, vanilla extract, and salt until well combined and slightly thickened.
  • Pour the batter evenly over the peaches without stirring.
  • Scatter the cold butter cubes over the top of the batter.
  • Bake for about 30 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  • Remove from the oven and let the cobbler rest for 5 minutes before serving warm.

Notes

Use ripe, fragrant peaches for the best flavor. Keep the butter for the topping cold to achieve a tender, flaky texture. Letting the peaches sit with sugar for a few minutes before assembling will help release their natural juices. Serve warm with vanilla ice cream or whipped cream if desired.
