Instructions
 

Preparation

  • Start by preparing the crust. In a mixing bowl, combine the graham cracker crumbs, melted butter, and ¼ cup of granulated sugar. Mix until the crumbs are evenly moistened and resemble wet sand. Press this mixture firmly into the bottom of a baking pan.
  • Preheat your oven according to your recipe guidelines.

Filling

  • Mix the cream cheese until it’s smooth and creamy. In a separate bowl, combine the cream cheese with ⅓ cup of granulated sugar, eggs, vanilla extract, and ¼ teaspoon of kosher salt. Beat until well combined and fluffy.
  • Gently fold in the freshly diced strawberries into the cream cheese mixture using a rubber spatula.
  • Pour the cream cheese mixture over the baked crust, spreading it evenly.

Topping and Baking

  • Prepare the topping by combining the all-purpose flour, light brown sugar, and a pinch of kosher salt in a bowl. Pour in the melted butter and mix until crumbly.
  • Sprinkle the topping evenly over the cream cheese mixture. Carefully place the pan in the preheated oven and bake until the filling is set and the top is lightly golden.

Cooling and Serving

  • Remove the pan from the oven and let it cool at room temperature. Chill in the refrigerator before slicing.
