Ingredients
  

For the crust

  • 2 cups freshly diced strawberries provides freshness and moisture

For the topping

  • 0.75 cups all-purpose flour gives structure
  • 0.25 cups light brown sugar, packed adds depth of flavor
  • 0.25 teaspoon kosher salt enhances taste
  • 5 tablespoons unsalted butter, melted adds moisture to the topping

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and prepare your baking dish by greasing it or lining it with parchment paper.
  • In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar until resembling damp sand.
  • Press the crumb mixture firmly into the bottom of the baking dish to form an even layer.
  • Bake the crust in the oven until golden and slightly firm, then let it cool.

Cheesecake filling

  • In a large mixing bowl, beat cream cheese until smooth.
  • Add eggs, 1/3 cup of granulated sugar, vanilla extract, and kosher salt to the cream cheese and mix until well combined.
  • Gently fold in the diced strawberries into the cheesecake mixture.
  • Pour the cheesecake mixture over the cooled crust and spread evenly.

Topping & Baking

  • In a medium bowl, mix all-purpose flour, light brown sugar, and kosher salt.
  • Sprinkle melted butter over the dry ingredients and stir until crumbles form.
  • Crumble the topping evenly over the cheesecake layer.
  • Bake until the top is golden brown and cheesecake appears set, then let cool completely in the pan.
  • Chill the bars before slicing into squares.

Notes

Make sure all dairy ingredients are at room temperature for smoother blending. Allow to cool fully before refrigerating for better texture.
