Ingredients
  

For the cream cheese filling

  • 6 oz cream cheese, cold adds richness and creaminess
  • 3 tbsp granulated white sugar sweetens the cream cheese

For the strawberry mixture

  • 12 oz fresh strawberries, hulled and finely diced provides freshness and natural sweetness
  • 1/4 cup granulated white sugar for the strawberry mixture

For the cookie dough

  • 2 3/4 cups all-purpose flour, spooned and leveled structural backbone of the cookies
  • 1/2 tsp baking powder helps with leavening
  • 1/2 tsp baking soda assists in rising
  • 1/2 tsp salt balances sweetness
  • 1 cup granulated white sugar sweetens the cookie dough
  • 1 cup unsalted butter, very softened gives a rich, tender texture
  • 1 ea egg, at room temperature binds ingredients and adds moisture
  • 2 tsp vanilla adds depth to flavor
  • 1/4 cup granulated white sugar, for rolling dough in creates a sweet, crunchy exterior

Instructions
 

Preparation

  • In a mixing bowl, combine the cream cheese, 3 tablespoons of granulated sugar, and 1/2 teaspoon of vanilla. Blend until smooth and creamy.
  • Hull and finely dice the strawberries. Mix with 1/4 cup sugar and let sit until syrupy.
  • In another bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter and 1 cup sugar until light and fluffy.
  • Add in the egg and 2 teaspoons of vanilla. Mix until smooth.

Mixing and Chilling

  • Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.
  • Fold in the strawberry mixture gently.
  • Chill the cookie dough in the refrigerator for about 30 minutes.

Baking

  • Preheat the oven to the recommended baking temperature.
  • Scoop portions of dough, shape into balls, and roll in the remaining granulated sugar.
  • Place on a baking sheet, leaving space between each. Bake until lightly golden.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack.

Serving
