Ingredients
  

Main Ingredients

  • 2 cups fresh strawberries washed and hulled
  • 1 cup unsweetened applesauce
  • 2 tbsp unflavored gelatin powder

Instructions
 

  • Line the sides and bottom of an 8- or 9-inch square pan with parchment paper.
  • Blend strawberries and unsweetened applesauce in a blender until smooth.
  • Transfer the mixture to a heatproof bowl and sprinkle the unflavored gelatin evenly over it. Whisk until combined.
  • Warm the mixture using a double boiler until the gelatin fully dissolves. Let cool for 10 minutes.
  • Whip the cooled mixture on high speed for about 15 minutes until it quadruples in volume and becomes fluffy and pale.
  • Spread the mixture into the prepared pan and smooth the surface. Chill in the refrigerator for at least 1 hour or overnight.
  • Once set, lift the cake out of the pan and slice with a sharp knife. Serve chilled with optional whipped cream or fresh berries.

Notes

Use only fresh strawberries and unsweetened applesauce for the perfect fluffy texture. Chill thoroughly before slicing for best results.
