Filling

  • 3 cups chopped strawberries freshness and natural sweetness
  • 1/4 cup granulated sugar additional sweetness
  • 1 tablespoon cornstarch helps thicken the filling

Instructions
 

Preparation

  • Preheat your oven and grease or line your baking dish with parchment paper.
  • In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk until evenly mixed.
  • Incorporate the cold, cubed unsalted butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
  • In a separate bowl, whisk together brown sugar, egg, and vanilla extract until smooth.
  • Pour the egg mixture into the flour and butter mixture, stirring gently until just combined.
  • Press half of the dough mixture into the bottom of your prepared baking dish evenly.
  • Toss the chopped strawberries with the granulated sugar and cornstarch until the strawberries are completely coated.
  • Spread the strawberry mixture over the pressed dough evenly.
  • Crumble the remaining dough evenly over the top of the strawberries.

Baking

  • Bake in the preheated oven until golden brown and bubbly, about 30 to 35 minutes.
  • Let them cool in the dish before slicing.

Notes

Store at room temperature for up to two days or in the fridge for up to a week. Freeze bars for up to three months, reheating before serving.
