  • 1 cup unsalted butter, at room temperature For a rich, creamy texture

  • 2 1/4 cups all-purpose flour The base for the crust
  • 1/2 tsp baking powder Helps the bars rise

  • 1 cup diced fresh strawberries Adds moisture and natural sweetness

For the glaze

  • 1 cup powdered sugar, sifted For a smooth glaze
  • 1 Tbsp strawberry puree Adds flavor and moisture for the glaze
  • 1 Tbsp lemon juice Or enough to thin the glaze

Preparation

  • Begin by preparing your baking pan. Preheat your oven and line a 9×13-inch baking pan with parchment paper, allowing some overhang for easy removal later.
  • In a mixing bowl, cream the room temperature butter and sugar together until the mixture is light and fluffy.
  • Add the egg into the butter and sugar mixture, and mix until fully incorporated.
  • Next, stir in the fresh lemon juice. Make sure it’s fully blended in before moving on.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet mixture.
  • Fold in the diced fresh strawberries, ensuring they’re evenly distributed throughout the dough.
  • Spread the batter evenly in the prepared baking pan, smoothing the top with a spatula.

Baking

  • Bake the dough in the preheated oven until it is lightly golden and set.
  • After removing the crust from the oven, let it cool completely in the pan.
  • To prepare the glaze, sift the powdered sugar into a bowl, then mix with the strawberry puree and lemon juice until smooth.
  • Once the crust has cooled, drizzle the glaze evenly over the top.
  • Finally, remove the bars from the pan using the parchment overhang and slice them into squares.

Notes

Store these strawberry lemon bars at room temperature in an airtight container for up to three days. They can also be frozen for up to a month.
