Strawberry Layer

  • 1 cup fresh lemon juice About 4–5 lemons; provides tartness.
  • 2 tablespoons lemon zest Enhances citrus aroma and flavor.
  • 2 cups fresh strawberries, sliced Offers freshness and natural sweetness.

Base and Assembly

  • 1 package graham crackers Adds crunch and structure.
  • 2 tablespoons mint leaves for garnish Optional; adds a fresh touch.

Instructions
 

Preparation

  • In a large mixing bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
  • Gently fold in the heavy whipped cream until everything is well combined.
  • Add the thawed lemonade concentrate and mix gently until well incorporated.
  • In a separate bowl, combine the strawberry-flavored gelatin mix with fresh lemon juice and lemon zest; stir well to dissolve the gelatin.

Assembly

  • Prepare a 9×13-inch baking dish by placing an even layer of graham crackers on the bottom.
  • Pour half of the cream filling over the layer of graham crackers, spreading it evenly.
  • Pour the strawberry gelatin mixture over the cream layer, spreading it gently.
  • Add a layer of sliced fresh strawberries on top of the gelatin.
  • Finish with another layer of graham crackers, pressing them down lightly.
  • Pour the remaining cream filling over the top layer of graham crackers, smoothing it evenly.

Chilling

  • Chill the assembled lasagna in the refrigerator for at least 4 hours, or overnight if possible.
  • Before serving, garnish with optional mint leaves.

Ensure cream cheese is at room temperature for smooth blending. Use fresh strawberries for the best flavor and texture.
